Nipsey Lentils 💙
If you’re like me and a lot of other people in the world, you were impacted by the funeral of Nipsey Hussle yesterday, April 11th. I wanted to do something to honor him, so I created a meal based off of his African roots in Eritrea.
They use pungent spices like cardamom, ginger, cloves, etc and a host of other spices that bring so much life and flavor to food. Being that Nipsey was such a conscious soul and has a vegan mother ( which I am also assuming because she encouraged everyone to go vegan ), I’m almost positive (although I don’t know for sure) that he’s had this meal before. Somehow, it made me feel close to their family to be able to create this savory and simple dinner!
I turned on his latest album with the volume all the way up, and made my way to the kitchen to make magic. I hope that you too can recreate this and feel all the feelings and love that I felt while dedicating this meal to him and his family. Rest In Peace, Nipsey! INGREDIENTS (I did not measure but you can probably use about 1/4th tablespoon for spices):
sea salt (can omit for salt free)
grapseed oil (can use vegetable broth or water for oil free)
Organic Chopped Roma tomatoes
organic tomato paste
In heated skillet, pour in all spices and toast for a couple of minutes. Stir them frequently so that they don’t stick to pan.
Remove the spices, add grape seed oil and add onions. Cook for a couple mins until soft. Add spices back and mix into onions thoroughly.
Add chopped tomatoes and tomato paste. Mix all ingredients well.
Add dry lentils and minced garlic, and mix all ingredients thoroughly.
Add water until lentils are fully covered. Mix frequently so that they don’t stick. cover and let it simmer for about 45 minutes. You might have to pour more water over time, as the lentils soak it up, so be sure to keep watch.
As your lentils finish, taste and add more seasoning as needed.
(I added okra for my vegetables and mixed it in my own personal bowl)
